Tender spiced apples wrapped in golden tortillas, baked for a quick and tasty treat.

# Ingredients:

→ Apple Filling

01 - 2 medium apples (Granny Smith or Honeycrisp), peeled, cored, diced
02 - 2 tablespoons granulated sugar
03 - 1 teaspoon ground cinnamon
04 - ½ teaspoon ground nutmeg
05 - 1 tablespoon unsalted butter

→ Roll-Ups

06 - 6 medium flour tortillas
07 - 2 tablespoons melted butter

→ Cinnamon Sugar Coating

08 - ¼ cup granulated sugar
09 - 1 teaspoon ground cinnamon

# Directions:

01 - Preheat the oven to 375°F. Line a baking sheet with parchment paper.
02 - Melt 1 tablespoon butter in a skillet over medium heat. Add diced apples, sugar, cinnamon, and nutmeg. Cook for 4–5 minutes, stirring occasionally, until apples are tender and syrupy. Remove from heat and allow to cool slightly.
03 - Lay tortillas flat and evenly spoon the apple mixture along one edge of each.
04 - Roll each tortilla tightly around the filling and place seam-side down on the prepared baking sheet.
05 - Brush the roll-ups with melted butter. Combine sugar and cinnamon in a small bowl and sprinkle generously over the roll-ups.
06 - Bake for 12–15 minutes or until golden and crisp.
07 - Allow the roll-ups to cool slightly before serving warm. Optional accompaniments include vanilla ice cream or caramel sauce.

# Expert Tips:

01 -
  • They come together in 30 minutes flat, making them perfect when you want dessert without the whole production.
  • The tortillas get impossibly crispy and golden while the apples stay tender and syrupy inside—it's the best of both textures.
  • You get that warm-spiced apple pie flavor but can eat them with your hands like a treat.
02 -
  • Don't overfill the tortillas—I learned this the hard way when apple filling leaked all over my baking sheet the first time—a spoonful per tortilla is plenty.
  • Let the apple filling cool slightly before rolling or the heat will make the tortilla steam and separate instead of crisp up beautifully in the oven.
03 -
  • Don't let the apple filling cool completely—warm filling rolls more easily and creates steam that helps the tortilla get crispy.
  • If your tortillas are prone to cracking, wrap them in a damp towel for a minute before filling to make them pliable and forgiving.
