# Ingredients:

01 - 1 cup (240 ml) water
02 - 1/4 cup (60 g) unsalted butter, cut into pieces
03 - 2 tablespoon (25 g) granulated sugar
04 - 1/4 teaspoon salt
05 - 1 cup (120 g) all-purpose flour
06 - 2 large eggs

→ For Frying

07 - 2 cups (480 ml) vegetable oil

→ Cinnamon Sugar Coating

08 - 1/2 cup (100 g) granulated sugar
09 - 1 tablespoon ground cinnamon

# Directions:

01 - Combine water, butter, 2 tablespoons of sugar, and salt in a medium saucepan. Bring to a boil over medium heat.
02 - Reduce heat to low, add all-purpose flour at once, and stir vigorously with a wooden spoon until a smooth dough ball forms and pulls away from the sides of the pan, approximately 2 minutes.
03 - Remove the saucepan from heat and allow the dough to cool for 5 minutes.
04 - Incorporate eggs one at a time, mixing thoroughly after each addition until the dough becomes smooth and glossy.
05 - Transfer the completed dough to a piping bag fitted with a large star tip.
06 - In a deep pot or fryer, heat vegetable oil to 360°F (182°C).
07 - Pipe 1-inch (2.5 cm) segments of dough directly into the hot oil, using scissors to cut the dough. Fry in batches for 2-3 minutes per batch, turning as needed until golden brown.
08 - Remove the fried churro bites from the oil using a slotted spoon and drain them on paper towels.
09 - In a shallow bowl, combine 1/2 cup of sugar and 1 tablespoon of ground cinnamon. Toss the warm churro bites in the cinnamon sugar mixture until evenly coated.
10 - Serve the churro bites immediately.
