Feta Fried Eggs Grilled Cheese (Print)

Golden grilled sourdough with crispy feta fried eggs and melted cheddar for a rich, flavorful meal.

# Ingredients:

→ Dairy & Cheese

01 - 4 oz crumbled feta cheese
02 - 4 slices cheddar or mozzarella cheese
03 - 2 tbsp unsalted butter, softened

→ Bread

04 - 4 slices sourdough or country-style bread

→ Eggs

05 - 2 large eggs

→ Pantry

06 - 1 tbsp olive oil
07 - Freshly ground black pepper, to taste
08 - Pinch red pepper flakes (optional)

# Directions:

01 - Warm a nonstick skillet over medium heat and add olive oil, allowing it to coat the pan.
02 - Sprinkle half the crumbled feta into two circles approximately the size of the bread slices within the skillet. Crack one egg into the center of each feta circle. Season with black pepper and optional red pepper flakes.
03 - Cook for 2 to 3 minutes until the feta edges turn golden and crispy and egg whites are set. Gently flip and cook an additional minute for soft yolks or longer for firmer yolks. Remove and set aside.
04 - Butter one side of each bread slice. Lay two slices buttered-side down on a clean surface and layer each with two slices of cheddar or mozzarella cheese.
05 - Place each feta-fried egg atop the cheese layers and cover with remaining bread slices, buttered side up.
06 - Clean the skillet, return to medium heat, and grill sandwiches for 2 to 3 minutes per side, pressing gently, until the bread is golden brown and cheese is melted.
07 - Slice sandwiches and serve while warm.

# Expert Tips:

01 -
  • The salty feta crust changes everything you thought you knew about fried eggs
  • It hits that perfect spot between comfort food and something slightly more exciting
  • Takes barely twenty minutes but feels like a restaurant weekend treat
02 -
  • The feta circles will seem messy and that is exactly right, they crisp into lace rather than perfect patties
  • Do not salt the eggs themselves because the feta provides all the salt you need
  • A good nonstick pan is nonnegotiable here or the feta will stubbornly glue itself to the bottom
03 -
  • Low to medium heat is your friend here to avoid burning the feta before the egg whites set through
  • If your bread is very thick, tent the skillet with foil for the last minute to help melt the cheese without scorching the exterior
