01 - Preheat your oven to 400°F (200°C). Thoroughly pat the chicken thighs dry using paper towels to ensure crispy skin.
02 - In a substantial mixing bowl, combine the olive oil, minced garlic, chopped parsley, rosemary, thyme, lemon zest, salt, black pepper, and lemon juice. Whisk until well incorporated.
03 - Introduce the chicken thighs to the bowl with the marinade. Toss gently to ensure each piece is evenly coated. Allow to marinate at room temperature for 10 minutes. For a more intense flavor, refrigerate for up to 4 hours.
04 - Position the marinated chicken thighs, skin-side up, on a rimmed baking sheet or within a sturdy ovenproof skillet.
05 - Place the chicken in the preheated oven and roast for 35 to 40 minutes, or until the skin achieves a beautiful golden-brown crispiness and an internal temperature of 165°F (74°C) is recorded.
06 - Remove the chicken from the oven and allow it to rest for a minimum of 5 minutes before serving. Garnish with freshly chopped parsley and serve with lemon wedges, if desired.
