# Directions:
01 - Heat a large deep skillet over medium-high heat. Add ground beef or turkey and cook, breaking apart with a spoon, until fully browned, about 4–5 minutes. Drain excess fat if necessary.
02 - Add diced onion and red bell pepper to the skillet. Cook for 3–4 minutes until softened.
03 - Stir in minced garlic and cook for 1 minute until fragrant.
04 - Mix in rinsed rice, frozen corn, and frozen peas until evenly combined.
05 - Sprinkle kosher salt, black pepper, smoked paprika, dried oregano, and chili powder if using. Stir thoroughly.
06 - Pour in chicken or vegetable broth and raise heat to bring the mixture to a gentle boil.
07 - Reduce heat to low, cover skillet with a lid, and simmer for 15–18 minutes until rice is tender and liquid is absorbed.
08 - Remove skillet from heat and let it stand, covered, for 5 minutes.
09 - Fluff rice with a fork. Garnish with chopped parsley or cilantro and shredded cheese if desired. Serve immediately.
