01 - 1 (6 oz) package orange-flavored gelatin
02 - 1 cup boiling water
03 - 1 cup cold water

05 - 1/2 cup granulated sugar
06 - 1 cup vanilla yogurt
07 - 8 oz whipped topping, thawed

08 - 2 (11 oz) cans mandarin oranges, drained
# Directions:
01 - In a large mixing bowl, dissolve the orange gelatin in 1 cup boiling water, stirring until completely dissolved. Add 1 cup cold water and mix thoroughly. Refrigerate until slightly thickened but not set, approximately 30 to 45 minutes.
02 - In a separate bowl, beat the softened cream cheese with granulated sugar until smooth. Blend in vanilla yogurt until fully incorporated.
03 - Fold the thawed whipped topping gently into the cream cheese mixture until the texture is smooth and light.
04 - Once the gelatin has thickened but is not firm, carefully fold in the cream cheese mixture until the mixture is evenly blended.
05 - Gently stir in the well-drained mandarin orange segments, ensuring they are evenly distributed throughout the mixture.
06 - Transfer the mixture to a 9 x 13 inch baking dish or individual serving cups. Refrigerate for no less than 2 hours, or until fully set.
07 - Serve chilled. Optionally, garnish with additional mandarin slices or a sprig of mint.
