# Directions:
01 - Thoroughly wash the cucumbers and tomatoes. Thinly slice the cucumbers, halve the cherry tomatoes, and thinly slice the onion.
02 - In a medium mixing bowl, whisk together the apple cider vinegar or red wine vinegar with extra virgin olive oil, minced garlic, salt, and black pepper. Stir in red pepper flakes if desired.
03 - In a large bowl, combine the sliced cucumbers, halved tomatoes, and sliced onion. Pour the vinaigrette over the vegetables and toss gently to ensure even coating.
04 - Cover the bowl and refrigerate for a minimum of 30 minutes, allowing the flavors to meld. For enhanced flavor, marinate for a few hours or overnight.
