01 - 4 cups filtered water
02 - 1/4 cup organic cane sugar
03 - 2 tablespoons water kefir grains or 2 tablespoons ginger bug
04 - 1/4 cup fresh lemon juice

05 - 1/2 cup fresh orange juice
06 - 1/2 cup fresh lime juice
07 - 8 fresh mint leaves
08 - 4 thin orange slices
09 - Ice cubes, for serving
# Directions:
01 - In a clean glass jar, dissolve organic cane sugar into filtered water. Add water kefir grains or ginger bug along with fresh lemon juice, stirring gently with a non-metallic spoon.
02 - Cover the jar using a breathable cloth or coffee filter fastened with a rubber band. Allow to ferment at ambient temperature between 68–77°F (20–25°C) for 24 to 48 hours, until mildly fizzy and tangy.
03 - Remove kefir grains or ginger bug using a fine mesh strainer. Discard or retain for subsequent batches.
04 - In a pitcher, combine the fermented soda base with fresh orange juice, lime juice, and mint leaves. Stir to integrate flavors.
05 - Fill glasses with ice cubes, pour probiotic mocktail mixture over. Place a thin orange slice and extra mint leaves in each glass as garnish.
06 - Present chilled mocktail immediately to maintain effervescence.
