10 - Fresh raspberries

12 - Fresh mint leaves (optional)

# Directions:

01 - Combine water and sugar in a small saucepan and bring to a gentle boil, stirring until sugar dissolves.
02 - Add 1 1/2 cups raspberries and lemon juice to the syrup; simmer for 2 to 3 minutes until berries begin to break down.
03 - Strain the mixture through a fine sieve into a bowl, discarding seeds and pulp.
04 - Sprinkle gelatin evenly over the warm liquid and let sit for 2 minutes, then stir until fully dissolved.
05 - Stir in rose water and allow the mixture to cool at room temperature for 10 minutes.
06 - Divide half of the jelly mixture among 4 glasses, add a few fresh raspberries to each, and chill for 45 minutes until set.
07 - Whip heavy cream, powdered sugar, and vanilla extract using an electric mixer or whisk until soft peaks form.
08 - Spoon or pipe whipped cream over the set jelly in each glass, then chill for 10 minutes.
09 - Top each glass with the remaining jelly mixture, add more raspberries if desired, and chill at least 2 hours until completely set.
10 - Before serving, garnish with additional whipped cream, fresh raspberries, edible rose petals, and mint leaves.

# Expert Tips:

01 -
  • The gentle rose aroma feels like a secret floral garden tucked inside your dessert glass.
  • Its modest prep conceals a showstopper finish, making it my favorite easy-yet-fancy treat when guests give short notice.
02 -
  • Letting the jello base cool a bit before layering prevents melted cream disasters—I learned this on an especially warm afternoon.
  • Start with half the rose water if you’re unsure; too much can overpower the berries, and it's nearly impossible to fix after mixing.
03 -
  • Blooming gelatin in gently warm liquid and dissolving fully is the secret to a smooth, non-rubbery gel.
  • A quick blast with a kitchen torch around the glass edges (if you dare) loosens any stuck parfait for picture-perfect presentation.
