- Line an 8x8-inch baking pan with parchment paper to prevent sticking.
- In a large mixing bowl, combine rolled oats, almond butter, honey, melted butter, vanilla extract, and a pinch of salt. Blend until thoroughly incorporated.
- Press the oat mixture evenly into the prepared pan. Refrigerate to firm while preparing the gummies.
- Pour fruit juice into a small saucepan. Sprinkle gelatin over the juice and let hydrate for 5 minutes. Warm gently over low heat, stirring constantly until gelatin is fully dissolved. Stir in honey or agave syrup, mix well, and transfer to a parchment-lined small baking dish. Refrigerate for 45 to 60 minutes until set.
- Once fully set, cut gummies into small cubes with a sharp knife.
- Remove refrigerated oat base. Distribute homemade gummy cubes, freeze-dried fruits, and freeze-dried candy evenly on top. Press toppings gently to adhere.
- Chill the assembled pan in the refrigerator for an additional 10 to 15 minutes for optimal setting.
- Lift bars out by holding the parchment edges. Cut into 12 equal portions and serve.
