# Directions:
01 - Combine olive oil, minced garlic, rosemary, thyme, parsley, lemon zest, lemon juice, salt, and black pepper in a bowl. Coat the lamb chops evenly with the mixture, cover, and refrigerate for at least 30 minutes or up to 2 hours for enhanced flavor.
02 - Set the oven temperature to 425°F (220°C) to ensure optimal roasting conditions.
03 - Toss halved baby potatoes with olive oil, dried oregano, garlic powder, salt, and black pepper until evenly coated. Arrange them in a single layer on a baking sheet.
04 - Place the baking sheet in the oven and roast the potatoes for 30 to 35 minutes, turning once midway through, until they are golden and crisp.
05 - Meanwhile, heat a grill pan or skillet over medium-high heat. Remove lamb chops from the marinade, pat dry, and sear each side for 3 to 4 minutes to achieve medium-rare doneness or cook to preferred level.
