# Expert Tips:

01 -
  • The sauce creates this gorgeous sticky coating that tastes like you spent hours on it
  • It uses pantry staples you probably have right now
  • Weeknight elegant without actually being difficult
02 -
  • Soggy salmon comes from not patting it dry first, this step matters more than you think
  • The sauce will seem thin going on, but it thickens beautifully in the oven's heat
  • Overcooking happens fast, check at 15 minutes even if you're doubtful
03 -
  • That quick broil at the end creates restaurant-worthy caramelization, watch it like a hawk though
  • If your fillets are different thicknesses, put the thin ones on one side and remove them first
  • Room temperature salmon cooks more evenly, cold fish goes into a hot shock
