# Directions:

03 - Add diced onion, bell pepper, and minced garlic to the skillet; sauté for 3–4 minutes until softened.
04 - Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper; cook for 1 minute until fragrant.
05 - Add uncooked rice, diced tomatoes with juice, tomato sauce, and beef broth to the skillet; mix well.
06 - Fold in black beans and 1 cup of the shredded cheddar cheese.
07 - Pour the mixture into the prepared dish and spread evenly.
08 - Cover tightly with foil and bake for 30 minutes.
09 - Remove foil, sprinkle remaining 1/2 cup cheddar cheese on top, and bake uncovered for 10 minutes until cheese melts and rice is tender.
